I love basil....no, really, I love basil. One of the best ways, I think, of keeping the flavor of summer through wintertime is by making lots and lots of pesto. I did my first round today but one of the greatest things about basil is that you can prune it and use it and it keeps growing back, every time. It's amazing. You can see the recipe I use below:
2 cups - tightly packed fresh basil leaves
2 cloves - garlic
1/4 cup - parmesan
1/2 cup - almonds
1 cup - olive oil
salt & pepper to taste
Place all the ingredients in a food processor or high-powered blender and blend until smooth. Fill ice trays with the pesto and freeze. Once frozen, pop those suckers out and place them in a freezer safe container or ziploc bag. And bada-bing! That's it, folks. So easy!
