Strawberry Harvest | Personal

This is the third summer we've had our strawberry plants, and up until this year they haven't really produced much fruit.  This year is an entirely different story.  For nearly two weeks, we've been harvesting between 5 and 10 pounds of strawberries every day!  We obviously cannot consume it as quickly as it's producing, so we freeze some (for our ridiculous smoothie addictions) and make lots of jam with the rest.   {See recipe below}

Strawberry Jam

1 2/3 cups - crushed/mushed strawberries

2/3 cup - sugar

2 Tb. - instant pectin

Use a food processor to chop the strawberries into more of a chunky liquid consistency.  Mix sugar and pectin in a separate bowl.  Combine everything and stir for 3 minutes.  Place in a freezer safe container and let sit for 30 minutes.  Place in the freezer until you're ready to use it.  Easy peasy.
